Summer Berry Mocktail

Ingredients

  • 2 floz Peach nectar (can buy in the juice section at your local grocery store)
  • 2 floz Strawberries, pureed
  • 3 floz Spindrift Lemon sparkling water (or any other non-sweetened lemon seltzer water brand of your choosing)
  • 1 Lemon peel to garnish

Bartending tools needed:

  • 1 Bartending shaker
  • 1 Bar jigger (usually double sided, used to measure fl.oz. for shots, could also use a liquid measuring cup for this if you have it at home instead)
  • 1 Hawthorne strainer
  • 1 Small fine mesh strainer (optional if you don't mind the strawberry seeds or a more smoothie-like consistency)

Instructions

  • First, start by pureeing about 3-4 washed strawberries in a blender or food processor, removing the leaves and stems before adding them to the machine.
  • Measure the 2 fl. oz. of peach nectar and 2 fl. oz of pureed strawberries into the bartending shaker with a handful of ice; put a lid on the shaker; and shake for about 30 seconds until the strawberry puree and peach nectar is combined and cooled.
  • Carefully remove the top of the shaker. Put the Hawthorne strainer over the shaker, and use the fine mesh strainer over your glass to strain your drink from the shaker into your glass of choice. We're double straining this cocktail instead of single straining to make sure we remove all the strawberry seeds (optional though if you don't mind the strawberry seeds or a more smoothie-like consistency). You may need to use a spoon to kind of push some of the drink and strawberry purée through the fine mesh strainer and past the seeds at this point.
  • Remove the fine mesh strainer from the glass, then add the 3 fl. oz. of sparkling lemon water to your glass to finish the mix, and stir gently with a spoon for 3-7 seconds to combine the flavors (but not remove the bubbles!).
  • To garnish, take a vegetable peeler and take a long curl of lemon rind out of a lemon. Depending on the size of the rim on your glass, you can cut a small incision in the lemon rind so it holds onto the side of the glass, or you can use a long toothpick to skewer the lemon rind as well and place it along the side of the glass.
  • *Optional: if you'd like to add more lemon flavor to your cocktail, you can "express" the oils in the lemon rind. You can do this by gently squeezing the lemon rind with your fingers, over your drink, a little essential oil will come out of it into your drink. Then rub the inside of the rind over the rim of the glass.
