Pumpkin Baked Ziti with Sage Sausage

This week, I made a recipe inspired by a fellow blogger on Pinterest that I have on my Pimento & Prose “Fantastically Foodie” board (#shamelessplug, I know, here’s the link 😂) called Pumpkin Baked Ziti with Sage Sausage.

I was in the mood to use my cast iron skillet, and I like to try and use what’s already in my pantry when I can — this week, that item happened to be canned pumpkin! It’s been so dull and dreary outside I wanted a warm, feel-good dish for meal prep this week.

You can also definitely sub out multiple things in this recipe to better suit what you have on hand:

  • Vegetable broth for Chicken Broth
  • Sage sausage for Italian sausage
  • Olive oil for Canola oil
  • Red pepper flakes for Paprika or Chili powder
  • Cast iron skillet for Saute pan & Oven safe baking dish
  • Depending on the size of the container you use, I got about 7-8 single-serve Tupperware containers out of this for meal prep.

Oatmeal Chocolate Chip Cookies

This is our family’s favorite, classic recipe for oatmeal chocolate chip cookies. A little soft in the middle, crispier on the edges, and beloved by everyone who tries them, these don’t last long in our house! Recipe Notes:

  • We love using Country Crock’s plant-based stick butter.
  • To make this gluten-free, you can also use your favorite 1-to-1 gluten-free substitute flour – Bob’s Red Mill gluten-free flour or King Arthur’s 1-to-1 Flour works great!
    • Make sure to use gluten-free labeled oats if making this gluten-free too.
  • I use both semi-sweet + bittersweet/dark chocolate chips in our recipe always, so 1 cup of each.

Mixed Fruit Jam

This was a fun mixed fruit jam to make as I got to experiment with vanilla bean paste and a food mill for the first time! Loved using in-season plums for this jam as it reminded me of a plum jam my grandma always had in her pantry when we came over to visit.
